Chef Sau Del Rosario’s Pampanga Buffet in Novotel Manila

Chef Sau Del Rosario is the guest Celebrity Chef at Kanyaman Filipino Food Festival in Food Exchange, Novotel Manila extended until June 30, 2017. Chef Sau showcased the Kapampangan fusion dishes called Avant Garde Capampangan Cuisine.  As a proud cabalen, he is serving delectable native dishes from Pampanga with a twist as he had international working experience in top restaurants and hotels. What I love about his way of cooking is that he enhance the flavors of the traditional food yet not over powering the original taste of it.  Pampanga is known to be the Culinary Capital of the Philippines for great cooks are from this province, Chef Sau is one of them and take the cuisine to the next level by adding his expertise and passion in it.
 
 
My friend Miss Joyce and I travelled all the way from Pampanga to partake with this great feast celebrating Kapampangan Cuisine. We are fortunate enough to meet Celebrity Chef Sau Del Rosario upon entering Food Exchange, fate is on our side as he mentioned he will go back to Pampanga in a while to get some stuff in one of his restaurant. So I grab the opportunity to have photo with him for the second time as I met him in Cafe Fleur, one of his restaurants in Angeles City. I really admire his passion for cooking and love for the Kapampangan Cuisine. Being in the food business, he inspired me to improve my craft and hone my skills and talent in cookery.
 
 
You can enjoy the  wide array of international dishes such as Indian, Japanese and ofcourse Filipino cuisine especially Capampangan Cuisine. There’s a lot of sumptuous dishes and for sure you will love many of them. As a Kapampangan I tend to be picky on food especially I have also a food business, let see if how many dishes stand out. 🙂
 
 
Some of his signature dishes are Lamb Shank Caldereta, Paco Salad, Tamales Pampanguena, Roasted Pork Belly Three Ways with Bringhe, Mangoes & Chocolate, Truffled Sisig Paella, Sisig Sushi, Pastel De Lengua, Tinapa Truffled Mousse and others. Most of these items are applauded in different local and international food expo. There is so many items to choose from but here are my Top 5 Must Try Kapampangan Dishes at Kanyaman Food Fest.
